We prepare all of our food in house using the best fresh and seasonal ingredients.
Our fish and Seafood comes from The Severn + Wye Smokery in Gloucestershire. We choose seasonal, sustainable.
Severn + Wye are members of the Sustainable Eel Group.
We cure our own salmon using the finest Var Salmon from the Faroe Islands.
We use Clarence Court eggs in all of our dishes.
Herrings are from the Baltic Sea and are marinated in house.
